And What format would I keep them in? I want itunes and apple tv quality

Answer : The difference between DVD and digital format?

To get the best quality possible, the best bet would be to take an ISO of the DVD. No re-encoding, although you're stuck with ~6GB files per DVD. The procedure would be the same as if you were going to use handbrake to compress the files, except don't process after ripping.

Getting the raw VOBs is basically the same as getting an ISO as well.
