Does anyone know a way in Sharepoint to move recurring calendar items that fall on a weekend to the following Monday?

As per my understanding, I don't think you would be able to do it with out-of-box calendar webparts.

However, there are workarounds like hiding saturday, sunday -

To achieve your requirement, you might have to look at 3rd party webparts like
