Question : File Server Migration: How to deal with roaming profiles?

I'm migrating data from an old file server to a new one. Currently I have most migrated, except the roaming profiles hosted on the file server.

How should I deal with migrating profiles? Must the user be logged off at the time of the copy and the change of the profile folder path? We have a mix of Windows XP and Windows 7 clients.
