In general terms of NAT and NO NAT, you might come across a scenerio where, when a traffic is leaving an interface, which, say is, HIDE NAT-ed, you would want the packtes to be not NAT-ed.
Suppose, traffic is goin from ur internal network to ouside network (interface), and if u have a branch connection terminated in ur router, above the firewal. Now if u have the external interface of the firewall in HIDE NAT scenario, u can mention that all traffic going to this particular branch office should not be NAT.
