Question : Define what Volume Groups are for

I am setting up a SAN made out of a server using a software SAN such as OPEN-E.

I have 2 raid cards with 16 hard disks of various sizes. I paired all the same disks to make raid setups. I made:

200GB Raid 1 (2 disks) 7200 Rpm
133GB Raid 10 (6 Disks) 10K Raptors
133GB Raid 10 (6 Disks) 10K Raptors
166GB Raid 1 (2 Disks) 10K Raptors

The software is telling me to make VOLUME GROUPS. The raid sets I made show up ass 4 separate drives on the SAN software. I can make one volume group and put all the drives in it. Or I can make two volume groups and put two drives in each group. Or I can put each disk in it's own volume group.

What is a Volume group? What is the purpose and what determines how many drives I should have in a group?

I realize i can create LUNS out of each drive once a group is assigned. But i want to know what happens if I put all the drives in one group. Does it combine them into one big drive like JBOD does?

And also what is a system volume group?

(I only have one SAN with two NICS)
