Apache 2.2.x tends to provide better performance over the other branches, I would highly recommend using it. It also has better multithreading support, making it the preferred version if you're using a multi CPU configuration. With regards to PHP, I would run whatever version is the latest of PHP5 to ensure you are up to date with security fixes and what not.
