Question : Please help me come up with a specific Linux hard drive imaging process

Hi: I need to come up with an answer to a growing concern I have for the many Linux (CentOS) boxes I have under my control.
The ultimate goal would be this: Have a process in place, where from a remote location, using the Internet, I could access a CentOS 5.5 type server, and create an exact (duplicate) sector by sector copy of the hard drive (commonly called disc imaging) ... and 'store' that image in a 'hidden' or separate non mounted type partition on the hard drive. I would then like to be able to copy the image file OFF the hard drive via the Internet to a backup server on my side.
Also ...
If there was a crash of the box, and/or a need to restore the hard drive ... I would like to be able to SSH into the Linux box and 'restore' the unit back to the state it was in from the completed image file .... I know I might need to boot to a CD-R "LIVE disc" for the restore because the hard drive might need to be unmounted and/or the hard drive might be non bootable, etc ...
My point is ... I want to be able to have rock solid disc imaging process in place to backup (image) and restore a CentOS 5.5 box from a remote location.
