Question : How do I make sure that DFS is operating with Server 2008 options (file deltas)?

I have to install Microsoft DFS to replicate data between two domains in the same forest; one in the US and one in the UK. I want to be sure that when installed, it uses the variation of DFS provided by Server 2008, so that replication traffic is optimised, and that only file deltas are sent between the respective file servers. My questions are:-

1. The domains are at 2008 functional level, whilst the forest is at 2000 functional level. Do I need to raise the forest functional level to get DFS working how I want it to?

2. I know that DFS must be run on Server 2008 to get what I want, but what happens if the data I am sharing resides on a server running Server 2000, or 2003? Will this afffect the ability of DFS to transfer the deltas rather than complete files for replication?
