1. For DC.
Restore from snapshot on VMware won't cause any issue to your DC function. However, you may lose some AD records after snapshot was created.
2. For Exchange:
Assuming the exchange istore stays in a separate storage and only exchange application is running on local where snapshot is affected. If this is the case, snapshot only affects the Exchange configuration. If the data is on snapshot as well, you will lose the emails since last snapshot was taken.
