Question : Which VMWARE software should i run? ESXi, ESX, vSphere, Server????

I've used VMWARE server installed on a desktop for a while now, and it's worked just fine for the 3 or 4 machines i've run underneath it. i've also used ESXi very briefly.
Here's my question -
I'm meeting with a client that is going to need two servers: a windows 2008 small business server (running domain controller services (AD, DNS, DHCP, etc.) and a file server) as well as a second windows 2008 server that's going to function as a database server (SQL 2008).
Instead of purcahsing two seperate servers, i'd like to get by running both servers, virtualized, on an ESX(i?) machine. The office is small - no more than 5-7 computers, so i think that would be the most cost effective for them too.
Here's my question - which VMWARE version could i use? I've used VMWARE Server, as i said, but i've noticed that i can only select 2 processors for use in virtual machines, even if the machine has 4, 8, etc.
Any help here would be greatly appreciated.

ESXi, in my opinion, is most certainly your best bet. You have much more flexibility for growth, if it is ever needed, plus it's a baremetal hypervisor (no OS overhead). ESXi is your best bet "mystical".
