Question : Forward meeting requests to another mailbox

We have exchange 2003, have setup 3 conference room mailboxes to act as resources when booking the rooms. I've gone into each of those and configured to automatically accept meeting requests, etc... So booking a room is working OK, I've now had a request to setup a notification to another user whenever any of these conference rooms are booked. Goal is to have office manager see someone booked the room and will make sure room is tidy, drinks, food, etc... So we thought best way would be to have the meeting request for the conf room also go to the office manager. I setup, in exchange, to have all email forward to another user, and set to send to both mailboxes, but since a meeting request isn't an email, the forward doesn't work...

So how would I setup an automatic forward of a meeting request to another user, from a mailbox that is configured to automatically accept meeting requests...
