Question : Help with MX Records Idiots guide please!

can someone give me an idiots guide please for setting up MX records for sending mail out.

We have sparadic problems usually every other day where emails back up in the queue on exchange 2010.

always seems to come back to DNS related errors, however despite searching i cannot find any precise instructions of how to create one step by step.

Our DNS and ADS are all on 1 server (10.0.0.2).
our mail server, exchange 2010 is on a seperate server (10.0.0.50)

our domain name itstraining.co.uk is hosted with Demon interent so no problems there.

details from whatismyip.com:

Im assuming i go do the DNS server on the Domain controller, then into forward lookup zones, then into the folder with our domain, in this case ITS.local and create new mail exchanger (MX).

Im getting confused with the options it gives me.

where it says "Host or child domain" do i just put ITS.local or itstraining.co.uk?

then it asks for a FQDN of the mail server, when i click browse it doesnt show the mail server, but the DC server instead?

any help would be great.
