Question : Multiple iPod Touch: Backup, Restore, access App store & iTunes

We now have three iPod Touches (first, second and third generation) and one iMac. All three will require seperate sets of Apps, Music, Photos, etc. How can I seperately sync each with unique data sets? Seperate imac accounts (administrative?) eg. gen1, gen2, gen3?

Or is there an alternate (preferable) method?
