Question : Exchange 2003 server reverting back to full backups when rebooting

On 6/25/2010 I performed a full backup of my backend Exchange 2003 server via the Brighstor Exchange agent.  It was successful.  On 6/27/2010 I performed a VM level backup via VEEAM.  I had their VSS backup option enabled.  When creating the snapshot on the VM datastore the store seemed to run out of space or close to and the server rebooted... Not sure if this was due to space or something else.  At this time I was still using local storage.  When the server came back up the infostore would not start.  I noticed that the priv.edb, pub.edb, and the streaming file had a '_' in front of each file name.  After messing around with it I simply restored the db from Friday's full backup and it came back up.  Then on 6/28/2010 I moved the VM's to a new datastore that is a NFS volume with alot of free space..  I performed another full backup.  I then rebooted and when it came back up it rebooted itself.  It then booted fine after that.  I noticed that the file names had the '_' character in front of the file named.  I renamed the files and then infostore then booted, however, I don't had Monday's emails... So, I did another restore...  This gave me my emails up to Monday evening.. Then current emails came in...  I let it run all day and this evening I rebooted again and got similar symptoms.  This time the server rebooted itself, however, I did not have_' in front of the file name.. But.. my emails where reverted back to Sunday evening.   I also noticed that other settings where reverted back to Sunday evening...  It seems that my data is reverting back...  

Here's another interesting issue..  

I rebooted my Windows 2003 Standard Exchange server this evening...  upon booting drive D: was not listed in my Computer. I went to Computer Management/Disk Management and saw that the dynamic disk was offline and unavailable. I reactivated the disk and eventually it came back online. The virtual disk is issues from my ESXi host. I have a NAS volume mounted to my ESXi host as a datashare and I distribute virtual disk from it.

Once I mounted everything worked but I only had my data from Sunday evening...  I'm lost..

I'm doing a restore from Monday's full backup right now and I'll then do a differential import of Today's emails.  This will get my emails current except maybe 15 mins or so..  I'm scared to reboot anymore...  

any suggestions?!

Yes, I would probably leave all disks as normal. Now you might want to take a backup of all of your email/exchange stuff right before you shut down this time (or like you said, copy it to another disk).

I am not sure what would be easier, copy to another drive, reconfigure exchange to point there

or

Just backup before you go down, change the disk to not be independent (normal), and restore when you come back up
