Question : Can Windows Server Standard 2008 FE be upgraded to Standard level without breaking Exchange 2007 SP1 currently installed?

I have been able to confirm the OS upgrade path is available as long as it is in the same architecture 64 bit to 64 bit and only to Windows server 2008  standard R2 level.  It's the Exchange 2007 SP1 that I'm am unsure how it will take the inplace upgrade..
Long story short my predecessor did not anticipate the small organization would need more than 75 user accounts/mailboxes and small budget means this new hardware installed just one year ago needs to be used.  Ideally I would prefer not have to cleanup/remove the first exchange organization on this domain and have to create a new exchange organization on the same domain (exporting/importing using PST files).
P.S
I am currently installing SP2 for exchange in order to have the latest updates before attempting this.

Your domain controller can be upgraded to 2008R2, however Exchange CANNOT I repeat CANNOT be on a 2008R2 box.  I can tell from your post if your DC is the same machine hosting exchange, but if that is the case, then this upgrade is not possible, otherwise you will be fine upgrading your domain controller seperate from your exchange 2007 server.
