Question : Changed dates on emails

Is there a way I can definitely confirm when an email was sent? Can I get this data from either the client or server? I am dealing with someone who is saying he sent an earlier email (with important information) but he might be really just changing the date of an email to an earler time from Control Panel (Windows), sending the email with the earlier date, then returning (through Control panel) back to today's date. He would say, "Oh, you didn't get it. Let me resend it." Of course, the "resent" email is the one that "proves" his point. Microsoft Outlook is used.

I believe the time shown on the email itself is the time it was sent from the sender. Then when you look at the Internet Headers and scroll all the way to the bottom, it will tell you when the senders mail server received it.

Do you know what email system he sent the email from? Exchange - Hotmail - Gmail etc...
